Brazilian worker turns increasingly to self services

With reduced purchasing power by increasing inflation, the Brazilian worker has done everything to save. This includes the food away from home. This quest has high demand in self-service restaurants, more commonly known as "self services".
"In a self-service operation, the worker is a good variety of foods that supply the basic demands stipulated by the World Health Organization [ONS]," said the Chief Executive of the Association of enterprises of Meal and food Insurance for the worker (Assert), Arthur Renato Brito de Almeida.
According to the entity, in previous years the operations-restaurants with dish made, the kilo, and à la carte-Executive had equal preference among consumers. 2010 already here, those who act with the sale of food by weight are preferred that economically active portion. "They are defending their fastening pockets," said Abdullah.
In addition to the self services, restaurants that offer dishes made, popularly called ' PF ', are also in the sights of Brazilian workers. "They offer greater cost-effectiveness in the hour of power," he said.
Change of habit
And it's not just the tighter Pocket which has made consumers change restaurants. "We have people increasingly health-conscious who want healthy products to feed," said DCI to the Chief Operating Officer of Divine network Stove, Emiliano Oliveira.

With 30 years in the food service market, the company just worked-in the beginning-with ready meals, but went on to act by selling the pound to meet consumer demand. "We did the replacement to serve customers who were on a diet, for example," he said.
According to the Executive, much more than paying cheap to feed, nowadays the possibility of one person get home for lunch is really very small. Soon, this has made the sector as much as the Country flag living a crisis, will grow significantly.
"More and more women enter the labour market and put their children in day care centers, being almost impossible to have time to go home for lunch. Another point is that companies are more lean and soup kitchens for their employees take lunch pail ", he explained.
With average ticket of $ 30 for full meals (involving dish, dessert and beverage) and r $ 24 only for food, Oliveira dispenses any concerns about a possible drop in sales.
"The crisis is something well punctuated and don't believe it's in all segments. What can happen is the consumer eat a lesser amount. What spent $ 40 on food will spend $ 30 and so on, "he argued.
For this year are provided for 15 new units which will reach 196 Stove Divine shops. "Our revenue grows approximately 12% and the opening of stores, at an average of 15%. Even with the consumer migration to smaller expenditures, we have no prospect of revising our estimates, "said Oliveira.
Measures
For the ceo of Assert, in addition to meeting more professionalized feeding these workers out of their homes, entrepreneurs restaurant owners must find the balance between pricing and operational cost. "We have inflation pushing the value of foods since last year. This year the biggest impact will be the increase of water and electricity bills, "said Oliveira.
In the last 10 years, inflation has pushed the price of food. The Brazilian Institute of geography and statistics (IBGE) pointed out that in the period of food inflation advanced 99.73%, while the national consumer price index (IPCA) Wide General stayed at 69.34%. The impact of inflation is different between food consumed at home and outside the home. In the first, over the past 10 years the inflationary influence was 86.59%. Already in the food consumed on the streets the index was 136.14 percent.
Among the solutions mentioned by the specialist is the rent price negotiation from the point and cost reduction. "Who operates in malls, in particular, has tried to improve the price of rents by they are very expensive. Without this they will not be able to avoid the transfer of prices, "he said.
It was precisely this that the Divine Stove did. "We have negotiated attractive prices with the administrators. In the case of the supply of products, buy always who offers the lowest price, "said Oliveira.
Even with the pros and cons, the food service in Brazil has presented an expressive growth. The expectation is that they are sold 7.8 million meals a day. This estimate refers only to the sale of foods with tickets and coupons at merchants, according to the Brazilian Association of collective Meals (Aberc).
Market
According to research commissioned by Assert the Datafolha, today 80% of workers who receive the benefit of food stamps already spend more than $ 600 per month-only lunch, adding costs from Monday to Friday. Who also works on Saturdays spends more than $ 700 in food stamps.
The average expense of Brazilians in large Brazilian cities are in R $ 27,36. "This points to a change in the composition of households and in the residential area of cities," explained ceo of Assert, Arthur Renato Brito de Almeida.
The expert stated that, in Brazil, almost 19 million workers benefit from food stamps according to the worker's food program (PAT). In force for 15 years, he has focused on helping low-income people-about 80% of that portion, or up to 5 minimum wages. The creation of the program helped in the expansion of food service.
Latest data of IBGE, pertaining to Family Budgets survey (POF) point out that today, 31.1% of households are in food outside the home. "This type of program exists in various countries of the world. In the country he began in early 1970, but is still small. The benefit of the card power supply is conditioned to a working agreement signed by trade unions and is not mandatory. "
