Chocolate producers from Bahia will create quality seal

During the first strategic planning workshop on Pousada La Dulce Vita, in Ilhéus, ten companies, which are part of the Association of Chocolate Producers of origin of South Bahia, decided to create a quality seal for their products.
The stamp will have the name of "Tree to Bar South of Bahia, will have as its goal the aggregation of values that determine excellence in technical quality of aroma and flavor that will identify this chocolate was produced in the region of the Atlantic forest in the South of Bahia, where it preserves the regional biodiversity. So, let''s protect the chocolates of origin which conform in parameters and conformities to be defined. To this end, a working group formed by technicians, producers and researchers with high degree of knowledge in chocolates (of origin), whose purpose is to present through the month of February the first version of the rules of use of the seal.
Regulatory criteria for cocoa production, cultural practices in farming practice in post harvest, fermentation methods, drying and storage, as well as protocols, processes and manufacturing techniques, and definitions of quantities and parameters for use of ingredients, were included in the document that aims to regulate and protect the authenticity and quality of chocolates of origin South of Bahia, made by the concept "Tree to Bar" or the tree bar , translated. When the regulation be ready an institution or even a technical body of the Association will make the certification, which will be given to products which fit in accordance.
According to Gerson Marques, Yrerê chocolate producer and Ceo of the Association, the idea is to standardize, but set the parameters that serve as a reference mark for producers of chocolates authentic southern Bahia, this reference will also serve for the consumer market that can identify the authenticity of a good chocolate of southern origin Bahia by stamp will be printed on the packaging. According to Gerson, in mid-2017 we will have approved seal.
